RST Received: Shall I log how I was received or how I received the other ham?

You can log whatever you want.

in the old days of paper logs,  there were two columns for signal reports. Outgoing or Sent (how you heard them) and incoming or Received (how they heard you) .

QSL cards usually have one column; you put the report of how you heard them.
