Does anyone have experience installing a 2m mobile or HT rig in a 1993 Ford Probe?  As with many sport coupes, the console occupies the entire floor space between the front seats and sits high, thus preventing an underdash installation.  Are there any solutions out there?

Yep, mount the rig vertically to the side wall of the center console, on the passenger side (so as not to disrupt your operation of the gas & brake pedals).

This works great, and unless your rig is extremely large, it will fit there just fine.
