Despite 2 QSL attempts and several emails, I have yet to get any response from EI7M (or its QSL manager, Denis, EI6HB).  I would very much like to confirm our 160m QSO.  Does anyone know any "magic," or is this typical of the East Cork Radio Group?

I received a card from a QSO during one of the recent contests this past Fall. It took a month or two - my guess is they had a big pile to send out.

Yes, but this was a January 2011 QSO.  I'll follow up with some of the suggestions.

Same thing here Mark, a couple of QSL requests and email with no response. It's more of a big deal for you since you worked them on the low band, but for me, I'll just work another station.

You might try LoTW.  I have LoTW confirmation from EI7M for a Dec 2011 QSO made on 10m during the ARRL 10 meter contest.

I also received LOTW QSL - after I received the actual paper card. So I do know that they follow through and QSL.

I got my LoTW confirmation from EI7M. I sent a paper card, too, but I realize that they probably make a lot
more contacts than I do, so it will take a while for me to get the paper card in return.

For what it's worth, I got three LOTW confirmations from them two days ago. Two were for the CQWW ssb contest last fall and one was for the recent ARRL DX ssb contest. So, their upload to LOTW came only 9 days after the most recent QSO.

I've made a lot of Qs with EI7M over the years and only five have been confirmed via LoTW. They were from CQWW last year and one from this year's ARRL-SSB. All these confirmations were received two days ago. Nothing before, including my own 160 QSO. I worked another EI on Topband back in 2006 (EI6IZ) and got an LoTW hit 3 days later.
