With capacitors coming this large you could just use a 10 ac transformer and rectifier that would just need to meet the average power needed over several minutes,, only a few amps for a 100w ssb?

Well he used the caps for just a few seconds.   Supercapacitors actually drop voltage level quite rapidly despite still holding a majority of their energy level.   Consequently they aren't ideal as a battery replacement.
