All of a sudden my spam folder is filling up with "undelivered mail" that I never sent. I'm guessing some spam bot got my e-mail address but what can I do from here???

You can do nothing about it (except maybe to set a spam rule which immediately deletes those mails, to reduce a little of the annoyance).

Anyone, including spammers, can send emails with your address (or any other address for that matter) as the sender address.

Thanks, that's what I thought but wanted to be sure. I'm not an internet guru.

The first thing you should do is change your email password in the event your account was hacked and is being used by a bot for distribution.  This will end the messages immediately if you are the one who was hacked.  Use a strong password if you aren't already.
