As much wire, as high as possible.<g>
For example, a JacKite windsock pole, 31' long, collapses to 4'.
You can use it to hold up the center of a full-size inverted-V dipole on 20m.
You can use it to hold up all of a 20m vertical dipole, with the feedpoint 16' high.
As with anything, the answer depends on your budget and other considerations -- "car portable" is quite different from "one-week-backpack-trip portable".
The FT-817 and HFPack forums on Yahoo have long, heated discussions on this question. You might check the archives there. PSK31 is no different from any other mode, when it comes to antennas.

The Par end-fed half-wave antennas seem to be very popular with those who operate portable. I use one here at home and am very happy with it.

I just spent a week in the Smoky Mountains, using my Icom 706 and a Rigblaster PNP hooked up to a "Hamstick Dipole" mounted on an extended paint roller pole at 12 feet off the deck of the balcony.
Yes, the 4,000 feet of altitude in the mountains helped...
I worked PSK31 and FeldHell all week on 20m and 40m - worked almost the entire US and Spain, France, Germany, Chech (sp) Republic and the usual South American countries.
Simple to errect, non intrusive for the neighboring condos, easy to transport.
What more could I ask for? :)

I am using the MFJ equivalents for Hamsticks and the MFJ dipole mount. I have pairs of sticks for 75M, 40M and 20M. Next to purchase will be 30M, 15M and 10M. I mount the antenna on five 5' mast sections from RadioShack and use a homemade, drive-on mount.

I use a 20m RG8X fed dipole, usually suspended up about 20-25 feet between conifers. Or as a sloper if I am feeling lazy. Radio is an Elecraft K2 and 5 aH battery.I use PSK31 %99 of the time on prtable ops since it is so effective and there are sigs day and night. Since most of the action is on 20m I just use the monoband antenna. Can fit the laptop, battery, radio, antenna into a day pack. (Schoolbook sized backpack).
