Hello

I thought i would try operating simplex on my Icom 2730, Having trouble figuring out how to do that. I have the manual and the radio is set up for duplex for repeaters. Any guidance will be appreciated

See page 50 of the manual.

In a nutshell - From VFO mode, select freq, press and hold [MONI DUP], rotate [DIAL] to select OFF, click the PTT. You are now set to TX and RX and same frequency, aka Simplex.

On my Yaesu FT -60 I just dial in a known designated simplex frequency and it automatically goes into simplex mode. Nothing else to do.
Not really sure about the Icom though.

The designated simplex frequencies can change regionally depending on your local coordination council
and the band plans that hey have adopted so beware of that one!
