Options are very limited - particularly if you are planning on purchasing a new radio. Really, that leaves you with just two choices if you are looking for a decent power output level - the ICOM IC-7100 or Yaesu FT-991A. The 7100 is designed as a mobile radio, the 991A is reasonably small and should be possible to fit into most cars or trucks, but it's not going to be particularly easy to install or operate. An FT-818 will cover the bands and modes, but it's only 5W, so you may find you need to add a linear. The same would be true of the ICOM IC-705.
If you are prepared to buy second-hand, then there are a couple more options - an FT-897 will cover all bands and modes with a reasonable power output and seem to fetch something like $600 - if you can find one! The FT-857 was designed as a mobile - well respected radio and should be available for a similar price...
