I kinda remember something like PK TERM or something like that, anything else out there that would work with the old 232MBX for RTTY, etc?

There is a 232 group on groups.io you can check.
I would think about any terminal program will work.

Back "in the day", and that was a LONG time ago, I use the terminal program called YAPP.  The name stood for Yet Another Packet Program.  It had a lot of good macro's built in and made operating the PK232 easy. It just saved a lot of typing to do things.

I have the last version of ROC for the PK-232. I purchessed it and have the license key. it still works great.
As far as I know it is the only program that gives full functionality of the PK-232.

if you google radio operations center it will bring up several versions. Look for the AEA version.

Will try some suggestions out and see what comes up.  This would be for RTTY and not Packet.
