I am building a speech processor kit that requires  an electret condenser mic. I would like to convert it to a dynamic type of mic (500-600 ohm). What do I need to do this?

I'd want to see the circuit diagram before answering this.

In some cases, all you'd need to do is remove the mike bias resistor and replace it with a nonpolar capacitor; although you may have to add another gain stage, or modify the gain of the existing stage.  Can't tell without the diagram.
